I call this my "kitchen salad" similar to my "kitchen soup" whichever I'm in the mood to make, something warm or something cold; each depends on whatever I have in the fridge or what I need to use up. I love these dishes. And they're so nutritious! I live alone so these meals are perfect for me but they can also serve a crowd.

I have been buying Rancho Gordo beans and about once a month I cook 3-4 pounds of beans: 1-2 pounds in the oven, and a pound in each of my slow cookers. I freeze flat in 2 cup portions. When I am planning the weekly menu, the beans I need come out of the freezer. I think a nice dense bean salad is just the thing for this week!
